Spring Salad with Poppy Seed Dressing
Salad Ingredients
1 package of spring mix
1 organic green apple, slivered
1/4 cup celery, chopped
1/2 cup dried cranberries
1/2 cup feta, crumbled
1/2 cup pecans
2 tbsp butter or ghee
1/3 cup brown sugar
Dressing Ingredients
1/3 cup honey
1/3 apple cider vinegar
2 tsp Dijon mustard
1 tbsp yellow onion, chopped
1 cup olive oil
1 tbsp fresh lemon juice
2 tsp teaspoons poppy seeds
salt and pepper to taste
Salad Directions
in skillet, melt butter and brown sugar. Add pecans and cook over low heat until sugar thickens and pecans are coated, about 2-3 minutes. Place pecans on parchment paper to cool. If you do not want to roast the pecans yourself, the honey roasted pecans in the bulk section at Hy-Vee work great!
Place greens into a large salad bowl. Add apple, celery, cranberries, feta cheese, and caramelized pecans. Drizzle salad with desired amount of dressing.
Dressing Directions
Place the ingredients in a blender or mini food processor. Mix well until blended.
Serve and store remainder in a jar in the refrigerator.
